At RxFood, everything starts with a why—a driving force shaped by real experiences and personal journeys. For Elizabeth Choi, a former systems design engineer, that why is a deeply personal one. Rooted in her decades-long struggle with an eating disorder, nutrition advice felt vague, judgmental, and impossible to follow—nothing ever truly made sense for her. This battle threatened not only her health, but also her career and her relationship with food. It shaped her understanding of how broken nutritional support can be.
Elizabeth had a defining moment in her life when she met Kale, a young man with Type 1 Diabetes whose questions about carbohydrate content revealed how crucial nutrition is to managing health. Through conversations with many others living with diabetes, she saw how food often causes anxiety or fatigue rather than support. Driven by pain, empathy, and a relentless desire to fix a broken system, a seed was planted in Elizabeth—a profound mission to transform how people understand and engage with food for better health. That mission inspired the creation of RxFood.
Recognizing the scale and complexity of this challenge, Elizabeth partnered with Dr. Jeffrey Alfonsi, an internal medicine physician and former peer in their engineering program. Dr. Alfonsi had witnessed firsthand the glaring gap in medical training around nutrition, despite its proven results in preventing and managing chronic disease.
Elizabeth and Dr. Alfonsi shared a deep frustration: the healthcare system was failing to recognize food as the complex, personal, and powerful foundation of health. Together, they set out to create something new—a groundbreaking platform that translates nutrition into clear, actionable insights, directly linked to real health data and outcomes.
